This is a new version of an old recipe. I love sweet rolls – with cinnamon, walnut, honey or berries, it doesn’t matter; if they are sweet, fluffy and warm, I enjoy them very much. These sweet rolls filled with cream cheese and raspberries are divine and all I can say is that they were not enough 🙂
INGREDIENTS
►For the dough
- 250 ml whole milk
- 50 g butter
- 450 g all purpose flour
- 7 g active dry yeast
- 50 g granulated sugar
- ½ teaspoon of salt
- 1 large egg
- 1 teaspoon of vanilla extract
► For the filling
- 200 g cream cheese
- 70 g powdered sugar
- 1 tablespoon lemon zest
- 300 g frozen raspberries
- 1 tablespoon cornstarch
► For the glaze
- 170 g powdered sugar
- 50 ml fresh lemon juice
- 30 g melted butter
DIRECTIONS
For the dough, heat the milk and butter; then add sugar and whisk until dissolved. Mix half of the flour with yeast and salt, then add the liquid mixture, egg and vanilla and mix until homogenized. Add the remaining flour and knead for 10-15 minutes (or 5 minutes with the stand mixer at highest speed). Give to the dough a round shape, place it onto the table powdered with flour and leave to rest for 10-15 minutes.
Meanwhile prepare the filling. Mix cream cheese with 50 g sugar and lemon zest. Place frozen raspberries into a bowl, together with cornstarch and the rest of the sugar and mix them so the fruits to be all coated with the white powder.
Roll the dough into a rectangular sheet (about 30 cm / 36 cm). Spread cream cheese evenly over the dough, then sprinkle the raspberries. Roll the dough into a log.
Cut the roll into 3 cm thick slices, using a sharp knife. Place the slices into the butered pan. Cover with a towel and leave in a warm place for about 30 minutes (or until the rolls double their size).
Then bake into preheated oven, at 175 Celsius, for about 30 minutes (or until tops are golden brown). While rolls are baking, prepare the glaze by mixing powdered sugar, lemon juice and melted butter until smooth. When rolls are done, remove from oven and allow to cool for a few minutes, then pour the glaze on top of them.
