Easy Chocolate Cake

This Easy Chocolate Cake is quite impressive and also easy to make. The classic chocolate-whipped cream combination is extremely delicious and the cookie crumb crust successfully replaces any sponge layer.  So this dessert is not only fancy and good looking but also incredible tasty 🙂

Ingredients Easy Chocolate Cake 

(for a 17-18 cm diameter cake)

 

► For the crust

  • 300 g Oreo cookies
  • 30 g butter, melted

 

For the filling

  • 300 g dark chocolate (40% cocoa)
  • 50 g butter
  • 2 egg yolks
  • 2 egg whites
  • 50 g granulated sugar

 

► For garnishing

  • 100 g whipped cream (sweetened)
  • 50 g chocolate flakes

Directions Easy Chocolate Cake

Preheat the oven at 175 degrees Celsius. Prepare a 17-18 cm diameter spring form by buttering it inside.

Put the cookies into a food processor and grind them to a fine crumb. Stir in the melted butter, then coat the inside of the spring form by pressing onto the bottom and up side. Bake the crust into the oven for about 20 minutes or until golden brown. When ready, take the spring form out from the oven and let cool completely.

In the meanwhile prepare the dark chocolate mousse filling. Chop the chocolate and put it into a bowl along with the butter. Melt the mixture into the microwave and homogenize.

Allow to cool slightly, then add the egg yolks, stirring quickly. Beat the egg whites with a pinch of salt, then add gradually the sugar and continue to beat until all sugar is dissolved and the egg whites turn into a meringue. Add the meringue to the chocolate cream in three additions, folding gently with a spatula until homogenized and smooth.

Pour the chocolate mousse into the crust, level and put the cake into the refrigerator until the filling is set (at least for several hours, better overnight). When ready, remove the cake from the spring form.

Before serving, decorate the cake with whipped cream and chocolate flakes.
