Oreo Dream Extreme Cheesecake recipe
This is my version of The Cheesecake Factory’s Oreo Dream Extreme Cheesecake. I didn’t have the chance to taste the original but I fell in love with the design of this delicious dessert and I was challenged to reproduce it. I was glad to work on this cake which has four different layers – of fudge cake, chocolate ganache, baked Oreo cheesecake and white chocolate mousse with Oreo crumbs, all covered in chocolate; and it turned out incredibly tasty and moist – a real „porn food”. I used dark chocolate because it’s closer to our sweet tooth, but you can use milk chocolate instead – I know The Cheesecake Factory’s recipe uses sweeter chocolate. Anyway, this dessert is wonderful and we enjoyed every bite 🙂 And I know that my Oreo Dream Extreme Cheesecake recipe is as much as close to the original one 🙂
This recipe is for a 17 cm diameter cake (8-10 servings). So let’s proceed to the Oreo Dream Extreme Cheesecake recipe 🙂
Oreo Dream Extreme Cheesecake recipe – Ingredients and directios
► Chocolate fudge cake
- 50 g dark chocolate, melted
- 50 g butter at room temperature
- 100 g granulated sugar
- 1 large egg
- ¼ teaspoon of cardamom powder
- 1 tablespoon of orange juice
- 60 g sour cream
- 90 g cake flour
- 30 g dark cocoa
- ¼ teaspoon of baking soda
- a pinch of salt
- 60 ml hot water
Prepare a round baking pan of 17 cm (7’’) diameter, grease it with butter and cover the base with a disc of baking paper. Preheat the oven at 175 Celsius (350 F). Sift together flour, cocoa, salt and baking soda. Mix butter with sugar until creamy. Add gradually egg, orange juice, cardamom, melted chocolate, then dry ingredients alternating with sour cream. Finally add hot water and homogenize. Pour the batter into the prepared pan and bake for about 20 minutes. When it’s ready, let cool completely before taking off the cake from the pan.
► Chocolate Ganache
- 300 g dark chocolate, chopped
- 200 g whipping cream
- 2 teaspoons of sugar
Dissolve the sugar into the cream and bring to a boil, then pour it over the chocolate. Let it sit for a few minutes, then whisk until chocolate dissolves and the mixture becomes creamy. Let cool at room temperature.
► Oreo Cheesecake
- 250 g Philadelphia cream cheese
- 50 g powdered sugar
- 50 g sour cream
- 2 eggs
- 1 tablespoon of flour
- 1 teaspoon vanilla extract
- 8 Oreo sandwich cookies
Prepare a baking pan with 17 cm in diameter (grease it and cover the base with a disc of baking paper). Preheat the oven at 175 Celsius. Mix cream cheese with sugar until creamy. Add eggs, sour cream, flour, vanilla and homogenize. Pour 1/3 of the batter into the prepared pan. Place the Oreo cookies, then pour over the rest of the batter.
Put the pan into a larger tray filled with hot water. Baking in a water bath helps for the cheesecake to bake beautiful, quick and without cracking. It takes about 20 minutes to bake. When ready, let cool completely, then put it into the fridge for minimum 2 hours. When the cheesecake is set, you can extract it from the pan by turning it over a plate.
► Oreo Mousse
- 4 g unflavored powdered gelatin
- 60 ml milk
- 50 g white chocolate, melted
- 1 egg yolk
- ½ teaspoon of vanilla extract
- 150 g sweetened whipped cream
- 4 Oreo sandwich cookies, chopped
Dissolve the gelatin into 2 tablespoons of milk. Heat the rest of the milk and mix it with the egg yolk and vanilla extract. Melt the hydrated gelatin into the microwave for 3-4 second and add it into the egg-milk mixture. Add the melted white chocolate and homogenize. Incorporate the whipped the cream by folding in. Finally add the chopped Oreo cookies.
► Decoration:
- 100 g chocolate sprinkles
- 100 g whipped cream
- Oreo cookies (optional)
Oreo Dream Extreme Cheesecake recipe – Assembling the cake
Place the fudge cake onto a plate. Spread 1/3 of the chocolate ganache and cover with the cheesecake. Tighten an adjustable cake ring around the cake. Spread on top the Oreo mousse and level. Put the cake into the fridge for a few hours (better overnight), until the Oreo mousse sets completely.
Run a thin knife inside the cake ring to loosen it from the cake and remove it. Remelt the chocolate ganache by putting it into the microwave for a few seconds and cover the sides and top of the cake. Decorate with chocolate sprinkles and whipped cream.
Keep into the fridge until served.
