Peach Cookies Recipe
Croatians say it’s a traditional dessert of their own (and call it Breskvice); Italians as well (and call them Pesche Dolci). I saw them at Austrians, Germans (Pfirsich Cookies), Spanish (Galletitas de melocotón), Russians (персиковые печенье), Hebrews (עוגיות אפרסק), americans (Peach Cookies), Turkish (Şeftali Kurabiye), Koreans (사랑스런 리얼 복숭아 쿠키). I bet you’d find them all the way to Tanganyika shore 🙂 We Romanians also have known these cookies for a long time, we love and cherish them.
I tried to make these cookies more bio-friendly, so I used baking soda instead of baking powder, and I replaced food coloring with fresh sour cherry juice and turmeric. Don’t worry about the taste, we’ll cover it with vanilla extract. Last but no least, I added cream to the composition which made the cookies soft and tender.
This recipe makes about 20 Peach Cookies (40 shells) of 4 cm diameter.
INGREDIENTS Peach Cookies Recipe
► For the shells:
- 150 g soft butter + 10 g for greasing the hands
- 100 g powdered sugar
- 1 egg
- 1 teaspoon of lemon zest
- 1 tablespoon of fresh lemon juice
- 1 teaspoon of vanilla extract
- 50 g double cream (20% fat)
- 300 g all purpose flour
- ¼ teaspoon of baking soda
► For the filling:
- 2-3 tablespoons of walnuts/peanuts/almonds
- 3-4 tablespoons of peach jam or preserves
- 2 tablespoons of Peach Liqueur
- scraps of dough
► For garnishing:
- 200 ml milk
- 2-3 tablespoons of fresh sour cherry juice, strained
- 2 teaspoons of honey
- ½ teaspoon of powdered turmeric
- 2-3 drops of vanilla extract
- 100 g granulated sugar
- fresh mint leaves
DIRECTIONS Peach Cookies Recipe
►Prepararing the shells:
- Preheat the oven at 160 Celsius. Sift together flour and baking soda.
- Mix butter with sugar until creamy.
- Add, one at a time: egg, lemon juice, lemon zest, vanilla extract, cream.
- Finally add the flour mixture and mix with a spoon until incorporated. It will result a soft dough. If necessary, add some more flour.

- Divide the dough into equal balls (of 15 g each).
- Place the dough balls into the baking tray lined with baking paper.
- Put the baking tray into the oven and bake for 10-15 minutes (until golden brown).
- When done, take off the tray from the oven and let cool.

► Preparing the filling:
- Using a sharp knife, cut out the bottom of each shell and remove the center (as in the picture below), just to make space for the filling. Keep the crumbs, you will need them later.
- After you cored all of the cookies, put the crumbs into a food processor, add the walnuts/peanuts/almonds and ground them togehter. Then add the peach jam and the liqueur and homogenize.
- With this mixture fill the cookie halves and then connect each two of them in order to obtain a whole peach.

► Garnishing:
- In a bowl, mix together 100 ml milk, 1 teaspoon of honey and a tablespoon of sour cherry juice. Homogenize until honey dissolves. If needed, add one more tablespoon of juice.
- Bring to boil another 100 ml of milk, then add honey, turmeric, vanilla extract and homogenize. Then take off the heat, strain through a triple layered cheesecloth (to get rid of any impurities), transfer to a bowl and let cool.
- Dip half of each peach cookie into yellow milk, then dip the other half in red milk.
- Let them drain for a few seconds, them roll them in the sugar.
- Decorate with fresh mint leaves.
- They can be eaten immediately. They can also be stored for a few days in a tight container.
