Healthy Baked Veggie Patties

 

Since I discovered red lentils, my daughters often ask me to cook lentil patties for them. And when one of my girls was struggling with a food allergy, I tried a vegan version of this tasty burgers. Because they had no egg in composition, they were brittle; so I chose to bake them in the oven instead of frying them. Thus, we enjoyed a tasty, healthy and good looking meal.

Ingredients Healthy Baked Veggie Patties

  • 300g red lentils
  • 3 medium potatoes
  • 1 large carrot, grated
  • 1 red pepper, chopped
  • 1 red onion, finely chopped
  • 3-4 garlic cloves, finely chopped
  • 1 tablespoon dried parsley
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped
  • salt and pepper to taste
  • 100 g white breadcrumbs

Directions Healthy Baked Veggie Patties

Boil the potatoes with their skin on, in a lot of water. When they are cooked, discard the water, let the potatoes cool,  peel and grate them.

Bring to a boil 1 liter of water, add the lentils and continue cooking at low temperature for 10-15 minutes. Once lentils are cooked, discard the water.

In a large bowl mix potatoes, well drained lentils, grated carrots, chopped pepper, onion and garlic . Add spices, salt and pepper. Take a scoop of the mixture and roll it into a ball. Flatten each ball into a patty and coat them in bread crumbs. Place the patties onto a baking tray coated with baking paper and bake them  at 175 Celsius for about 15 minutes or until they are golden brown, then flip them to bake on the other side. These vegan patties can be served along with broccoli puree or with a fresh vegetable salad.
