No Bake Chocolate Chip Cheesecake

When I need a dessert and I happen to have Philadelphia cream cheese in the refrigerator, the first thing I’m thinking of is cheesecake. It’s simply and quick to prepare, even though it has a significant resting time (a few good hours), but it is a delicious, spectacular and very handy dessert; which doesn’t require some special skills, nor any special talent to decorate it. But cheesecake has always been and will remain a dessert with which you can impress your family and conquer any guest, no matter how pretentious or sophisticated would be.

The dessert I’m presenting today is a wonderful, delicious no bake Cheesecake, which consist from a combination of white chocolate, bitter chocolate and whipped cream – there’s no way a dessert could be tastier than that! I used bitter chocolate chips that make a nice contrast with the very sweet white chocolate and cream I used for the cake composition.

For the base I used Oreo biscuits with vanilla cream filling. You can choose any other kind of cocoa biscuits, just as well as you can use any other chocolate assortment, it’s up to your taste. I only recommend that you choose quality ingredients, because Cheesecake is a cake which, in its simplicity, has the elegance and refinement given by the quality of the ingredients used in the composition. cream cheese

Ingredients No Bake Chocolate Chip Cheesecake

 

For the crust

  • 240 g Oreo cookies
  • 100 g butter (60% fat)

 

For the filling

  • 325 g Philadelphia cream cheese
  • 30 g confectioner’s sugar
  • 2 tablespoons hot water
  • 200 g white chocolate, melted (but at room temperature)
  • 150 g whipping cream
  • 150 g chocolate chips

 

For decorating

  • 150 g whipped cream, sweetened
  • 50 g chocolate, grated

Preparing No Bake Chocolate Chip Cheesecake

 

 

Preparing the crust

Preheat the oven at 175 Celsius. Prepare a 18 cm diameter spring form pan. You can also use a round spring form pan up to 20 diameter or a 18 x 18 cm square one.

Crush the Oreo cookies into fine crumbs. Add the melted butter and mix well, until the mixture holds together. Transfer the mixture into the spring form pan and press using the bottom of a glass. Bake for about 20 minutes, then take the pan out of the oven and let cool completely.

Preparing the filling

Mix the cream cheese with confectioner’s sugar. Add hot water. Then add melted chocolate and homogenize. Add the whipping cream and beat until you get a fine mixture. Finally add the chocolate chips and incorporate them using a spatula. Do not use the mixer for this step. Transfer the composition into the pan, over the Oreo crust; and level it.

Let rest into the fridge for several hours or better overnight, until it’s completely set. Remove the cheesecake from the pan and transfer it onto the serving plate.

Decoration

You can decorate the No Bake Chocolate Chip Cheesecake as you wish. I love the combination of chocolate with whipped cream, so I decorated my cheesecake with whipped cream and chocolate curls.

Keep the cheesecake into the fridge until serving. It is a spectacular, delicious, fancy dessert which definitely would impress anyone.
